【作品介紹 Description】
這是一個54人的移動餐廳,它有全套廚房設備、吧台區、包廂區、兩人位與四人位。我們的靈感來自於,要是有一個餐廳可以跟著台灣的美景跟著台灣的美食環繞著台灣,那會有多麼的興奮!透過兩年的規劃與討論,跟廚師、營運商、台鐵、施工廠商討論一一地討論所需要的廚房設備、餐廳結構、火車重量、電力需求。最後一個最大的挑戰,它不是去國外買一台新車來打造,而是用一台50年老舊的莒光號,拯救回來,設計成今天我們的移動廚房。我們發現這台火車有一件非常有趣的事,也就是靠山的面永遠靠山,靠海的面永遠靠海,於是我們以這概念設計出一個不對稱的天花,重新的設計火車上原有的燈光,空調,喇叭與動線,我們把海景的窗拉大,把山景的元素拉近我們的室內,用餐的體驗與餐盤上的食材,更貼近我們的大自然。
“台鐵能做到 沒有其它公司做不到”
台鐵一向都是安全導向與保守的態度,2019年2月的觀光列車受到全台惡罵,使得這個132年的傳統產業,重新需要找出一個品牌的方向。鳴日廚房再次定義,安全與設計是可以走在一起的,公部門也可以有一個全新的政策,產出未來的商機。
It's Not a New Train – Thinking About Sustainability. After two years of planning and discussion with the Taiwan Railway Administration about this idea, we formed a fantastic team composed of designers, chefs, restaurant operations, and construction teams. The biggest challenge is that we did not purchase this as a new train from foreign countries, but we decided to use the old semi-retired train, salvaged from retirement, to design today’s “The Moving Kitchen.” It is part of our ESG goals and our thinking, can we recapture history and culture to make it into a new business model?
Up-Rising the Local Community. Opening up the township is one of our aims, it gives the public the chance to visit many small and forgotten stations. Thanks to the re-design of the train route, the public could explore those towns, energizing and driving new growth in local economies. Also, as it travels all around Taiwan, it allows us to invite all the best specialties from every city, such as fresh ingredients and prominent uprising chefs, we want to design this train itself as a destination, and a connection to our community.
